Objective:


Non-Consumable Materials:

1. Marcato Atlas 150 Pasta Maker. Cost $99.00 US.

2.10 inch Extra Long Dough Pastry Scraper. Cost $16.00 US.

3. 1 Cup Measuring cup. Cost $5.00 US.

4. Stainless Steel Baking Sheet

5. 304SS Lemon squeezer

Consumable Materials:

Crust

  1. 1.5 C. (300g) Flour
  2. 4 Tbsp. Oil.
  3. 2 egg whites.
  4. 0.5 Tbsp Lemon Juice
  5. 0.5 Tsp Salt
  6. 0.25 C. Water

Filling

  1. 4 Apples
  2. 0.5 C. Sugar
  3. 1 Zest of lemon.
  4. 0.5 C. Raisins.
  5. 0.5 C. Nuts, Walnuts and Almonds.
  6. 1 egg.
  7. 4 Tbsp. Butter

Cream

  1. 1 C. Cream
  2. 1.0 Tbsp. Sugar

Procedure:

  1. Add all flour ingredients except butter.
  2. Knead vigourously, 5 minutes plus, and set aside.
  3. Peel and cut apples thinly.
  4. Add sugar.
  5. Add zest of 1 lemon.
  6. Add raisins, then let bowl sit for 0.5 hour.
  7. Roll dough, use setting #8 on the Marcatto.
  8. Cover with butter.
  9. Add nuts on all surfaces.
  10. Scoop in filling in a lineon one end.
  11. Roll and properly seal ends while rolling.
  12. Place on pan and cover with beaten egg.
  13. Place in 350F oven, and baste with butter until golden brown about 40 to 50 minutes.
